The grape harvest


The harvesting of the grapes usually takes pIace in the second half of October.


In certain particularly hot years. the harvest is anticipated even as early as the end of September (2003 for example).


The grape harvest is done completely by hand. delicately placing the bunches of grapes in baskets. The de-stemming of the grapes takes piace just a few hours after the harvesting.

The fermentation follows with the inocula of selected fermentations yeasts.
